    Hey Dear fellow food lovers…Happy Sunday & Happy Father’s day !!!
    In our Father’s day special menu we are sharing the recipe of Cashew and Capsicum curry cooked in creamy sauce of Tomato, Onion and some mild spices.
    This recipe is perfect to be prepared on festivals or special occasions. It can be served with Rice, Chapati or Parathas.Hope you all like it…

    Step 1

    Soak Watermelon Seeds, 5-6 Cashews, Poppy Seeds & Sesame Seeds in water for 20 Minutes.

    Heat 2 Tbsp oil in a pan and roast Halved Cashews until golden brown.
    Take it out and keep aside.

    For Making Paste:

    There would be oil remaining in the pan after roasting cashews, add Ginger, Garlic in it and saute for 3-4 Minutes.

    Drain the water of soaked ingredients and add them into the pan.

    Once the ingredients of pan starts turning brownish add Onion cubes and saute until translucent.

    Now add broken Red Chilies and saute for3-4 Minutes.

    Add Tomato Cubes and saute till it becomes soft, it will take about 5 Minutes.

    Then turn off the flame and let the mixture cool down to room temperature.

    Once the mixture cools down take it out in a mixer jar and blend it to make the smooth Paste.

    Paste for gravy is ready.

    For Frying Gravy:

    Heat 1 Tbsp Oil in a Pan & crackle Cumin Seeds.

    Add Bay leaf and Cinnamon stick and saute for 2 minutes.

    Add sliced Onion and saute till translucent.

    Now mix Red Chili Powder, Turmeric, Garam Masala, Coriander Powder and saute for a while.

    Then add prepared paste for gravy and saute till it starts releasing oil.

    Now mix Capsicum cubes and pour some water in it, stir fry for 5 minutes.

    Then add fried Cashew and Mix well.

    Now sprinkle Kasuri Methi and Salt on gravy, if required add some water & Cook for 3-4 Minutes.

    Sprinkle Coriander leaves and turn off the flame.

    Kaju Capsicum Masala is ready to serve hot with Chapati or Paratha.
