Hey Fellow food lovers, Hope you are doing good . Today we are making a Punjabi style Bengan Bharta . Here a Smoky - Grilled Aubergine(Bengan) is cooked with spices and herbs which makes it a perfect side dish. Do try our version of this recipe and share your thoughts. So let's get started......

  1. First we have to prepare the Bengan (Aubergine) for grilling. Start with making multiple deep cuts into the Aubergine all over it .
  2. Now rub little Mustard oil all over it.
  3. Insert one clove of Garlic in each cut . That way the Garlic would also get the smoky - Grilled flavor . Now you can either grill it directly on gas stove or in an OTG.
  4. As it gets soft in texture let it cool then peel off the burnt skin of Aubergine.
  5. Now Mash the grilled Aubergine and Garlic thoroughly and keep it aside.
  6. To make Bengan Bharta heat the Cooking oil in a Griddle
  7. Then add Cumin seeds into it.
  8. Add Crushed Ginger and Chopped Chilies into it and cook for 20 seconds.
  9. Now add the sliced Onions into the pan and cook till it's translucent in color.
  10. Time to add Turmeric , Red chilly powder, Coriander Powder ,Garam Masala ,and Salt into the pan as well then Mix it thoroughly. Cook it for 2 minutes.
  11. Now add the chopped Tomatoes into the pan and cook till it gets dissolved properly.
  12. Time to Add Mashed Aubergine and Garlic into the pan and start roasting it.
  13. Cover it and roast for good 10 to 12 minutes.
  14. Finally add Green Coriander leaves and mix well. Then Switch off the gas stove .
  15. Our delicious Bengan Bharta is ready to be served. Enjoy it with Roti, Paratha or Poori. Hope this recipe comes out great for all of you.
